We love sweet potatoes for the vitamins, the minerals and all the fibers and the antioxidants effects it may have .

I love the softness brought by both the carrots and the sweet potatoes and the strength spread throughout the palate by the cumin

The ingredients

  • 4 medium sweet potatoes peeled and finely minced
  • 1 carrot peeled and finely minced
  • 1 medium onion peeled and finely chopped
  • 1/garlic clove peeled and chopped
  • 1Celery branch
  • 1sp olive oil
  • Mustard
  • Pepper
  • Cumin
  • Salt
  • Homemade vegetable powder

The recipe

  • In a large Dutch or in a heavy based pot oven over low heat (45•) saute onions, garlic, carrots , sweet potatoes until the carrots and sweet potatoes are aldente not too cooked but…
  • Add enough water to cover the vegetable
  • Add the celery branch
  • Add pepper, salt,the cumin
  • Close and cook for 5mn at medium heat
  • Blend the whole
